Salmon-Vegetable Curry and Cha Soba.

Living in Arizona, it’s a little difficult to get good salmon. When we lived in Colorado Springs, Colorado we drove up to the Boulder farmers’ market, from time to time, to get salmon from a fisherman selling there. I still think about that market because it was my favorite. It’s too bad I didn’t get a chance to check out the Crested Butte farmers’ market because that’s supposed to be even more amazing. It doesn’t mean that I can’t visit, though…

I’m glad that the Sierra Vista farmers’ market and Oro Valley farmers’ market have Alaskan fisherman selling their wild caught salmon and cod. Though frozen, the fish is still incredibly flavorful. The Sierra Vista fishermen are already back in Alaska and they’ll probably return in the fall, so we head up to Oro Valley (suburb of Tucson) to get our fix.

I love noodles and recently I made a curry sauce with Thai red curry paste, coconut milk, salmon, garbanzos, roasted carrots, eggplant, and asparagus over cha soba (green tea noodles). I used a good store bought red curry paste, so the whole meal was fast and easy to make. It was also very satisfying.
