Post Porcini Hunting Lunch.

27 Jul

Here are some shots I took while Jen, Butter, and I foraged porcini. We came back and ate such an incredible lunch after being outside for a big chunk of the day. Thanks again Jen and Jeremy for being such good friends and hosts. Thanks Butter for being a good friend and teacher. Last but not least thanks to the husband for driving to Boulder twice.

Obligatory iPhone shot of our hiking shoes…

Butter preparing some porcini. Cooked in butter and sprinkled with sea salt.

Manchego with Jen’s homemade membrillo.

Delicious wine, of course.

Heirloom tomatoes dressed with olive oil, balsamic, sea salt, and basil chiffonade

Butter lettuce, orange, sauteed corn, and jicama salad.

Cooked wild porcini

Perfectly cooked scallops with a white wine reduction.

My plate.

Oh my. You all are so fancy! I have no idea what porcini is but I’m off to look it up. The salad looks really good especially with the jicama. What was the corn sauteed in?

Ha, not fancy at all. ;) The corn was sautéed in olive oil.
