I swear I don’t just eat sweets! Lately I’ve been making a lot of them, along with comforting stews and such things. I can’t help it… I have such love for the raw milk we get now that I want to make things with it. Yesterday it was dulce de leche. I prefer mine not as sickly sweet and since the milk is so darn tasty, I wanted the taste of it to shine through.

I put a quart of milk along with 1/2 cup of raw sugar, 1/3 teaspoon baking soda (it’s supposed to prevent the milk from separating), and a pinch of sea salt and stirred it constantly until it came to a full boil.

I then reduced the heat to the lowest it would go and checked it every hour. Since I didn’t use as much sugar as usual, it definitely took longer… about 4 hours to get the consistency that I wanted. When it was ready, the quart of milk had reduced by half. I can’t even begin to describe how it tastes! It’s sweet but definitely less sweet than you may be used to and it’s so milky smooth and just delicious!

For breakfast this Sunday, I had some in my coffee and it made it so special. I love this dulce de leche and it definitely reminds me of what I grew up with. I’ll make more!
