The leaves have started to change, there’s a crispness in the air, and the sun goes down earlier. Autumn is here! I love eating seasonally and I’m lucky to have access to fabulous farmers markets & grocers. The fall brings some glorious foods, so I’m looking forward to cooking some favorite meals (oh stews! I love you!). Early this week, I scurried to get the last bites of summer by purchasing some beautiful peaches from a favorite grocer. Funny part is that Mr.E and I have only been enjoying the gorgeousness of peaches & nectarines by eating them as-is. Yesterday, I had an urge to make a peach crumble. I really wanted to make a peach pie, but my patience with preparing pastry dough is not like it used to be. That will go away one of these days and I’ll go on a baking binge! Watch out!
Anyway, this morning I prepared the crumble… simple and delicious. It came out of the oven not too long ago, I snuck a taste. Our meal this evening will consist of the left-over organic beef, bean, and chard chili that I made yesterday; corn tortilla & mozzarella quesadillas, and the crumble for dessert. With or without vanilla ice cream? Cozy, tasty, and oh so comforting. Life is good. There’s so much to be thankful for even if everything is not perfect. Happy Autumn!
